What is this white hairy / fur on this patient's tongue? Is this really hair / fur?

This is a condition called oral hairy leukoplakia. This is caused by the Epstein-Barr virus, and it can occur in patients with a weakened immune system, especially HIV / AIDS. Although it can resemble fur/hair on the tongue, it is not real hair.

It also looks similar to candida, but candida is caused by a yeast and can be scraped off. If you see this growth on your patient's tongue, you'll want to document and report it so that it can be investigated in more detail.
