A super simple recipe that's not only healthy but delicious. Sweet potato is such a miracle ingredient, it tastes so good and it's a super healthy food, talk about a win win. Plus it's easy to prepare. This soup can be made in 15 minutes plus cooking time. If you can peel and roughly dice vegetables, you can make this. Garnish with fresh coriander for that exotic flavour. If you have fresh ginger, use that instead. This is a fusion between french and Thai food. It's also called a veloute de patate douce in French. Happy cooking.
