These will be the best crispy roasted potatoes you will ever taste. Made with garlic, thyme and rosemary and crispy pancetta. The potatoes are first cooked in water until very tender. Baking soda is added to help breakdown the outside resulting in a soft sticky texture. It’s this texture that will brown nicely for that amazing flavour. It’s made by first making an infused oil made from butter and olive oil. The garlic and herbs are chopped and added to the hot oil with seasoning. It’s heated for a few minutes and then left to infuse. It’s then reheated and strained so you retain full freshness of the herbs and garlic. This allows you to cook your potatoes longer for that crispy golden caramelisation we all love all without burning the herbs or garlic.
