(1) The Best Quick to Make Fish and Chips. There’s nothing nicer than fresh fish and chips but the fish has to be fresh, the batter crispy and the chips (fries) to have the right amount of crisp but still have soft potato on the inside. See my fries (chip) recipe as it’s not in this video. You can use any basic white fish, some prefer cod, some use haddock and in Australia flake is common. In this recipe I used Australian flathead, but you can use any flaky white flesh fish. It just has to be fresh, frozen won’t yield the same results. There are many gimmicky batters out there, from using vodka, to using a soda siphon to aerate the batter, resting overnight etc, while these techniques do work, who has the time to fuss with that nonsense. This recipe takes 5 minutes to make, quicker than you can heat your deep frying oil and the batter will still be perfect.
(2) White Fish with Beurre Blanc Chive Sauce. Very simple restaurant quality dish at home! Beurre blanc is a classic French sauce which means white butter. It’s made with a reduction of white wine vinegar and finely chopped shallots and optional herbs. It’s emulsified by adding soft butter, in this case I also added a little cream to avoid separation. Served with a fresh white fish that’s been pan fried in nut brown butter. So quick and easy and of restaurant quality meal at home, enjoy!
(3) Crusted Butter Fried Fish, with Lemon and Oregano. You can’t beat fish cooked in butter, and by clarifying the butter it’s allows you to reach a higher temperature without burning. This method gives you a crispier crusted outside, better than cooked in standard butter. This recipe is so simple to make, no batters to worry about, just flour mixed with a few simple ingredients. Use the best quality white fish you can afford, you can cut it in finger shapes or longer, that’s up to you. Enjoy Butter Fried Fish
(4) Miracle Lemon Butter Sauce. Snapper Fish in Lemon Butter Sauce with Dill and Capers. This sauce should be called a miracle sauce! It’s so quick to make with few basic ingredients and the taste is out of this world! In this recipe, I used snapper fish, but you can use any white fish you like, it will be amazing. Try and avoid oily type fish such as salmon, as a butter sauce is already rich. When making the sauce, mix it over very low heat, do not try to boil it or reheat it. It will break. This sauce is to be consumed immediately. It’s rich, glossy and creamy, and tastes delicious. I like to serve it with simple boiled potatoes. You can also use boiled or steamed rice. I love asparagus with this, but most greens will go well. Enjoy my Miracle Lemon Butter Sauce today!
(5) Simple Thai fish cakes with sweet chili sauce with chili Sauce. Thai fish cakes are another one of my favourites when it comes to Thai cuisine. These Thai fish cakes are packed with flavour and each bite will raise your eye brows. They are so simple to make if you have a food processor. If not, then you can still do it with a knife or a cleaver and a mixing bowl, no problem. There’s something special about the smooth springy texture of fish cakes, but you don’t want them rubbery. Buying good quality fish will also help, don’t use anything dry, go for softer or oily white fish fillets. Check all the bones are removed first. Most Thai people deep fry them, but I find you can get away with shallow frying. I also like to fry the coriander (cilantro) witch becomes crispy and adds another layer of texture and makes for a stunning garnish. Serve these Thai fish cakes with a sweet chili sauce, garnished with a cheek of fresh lime and a few slices of chili. These are also known as Tod Mun pla.
(6) Fish Meuniere with Spring Onion and Dill Potatoes. Meunière sauce is traditionally a rustic brown butter and lemon sauce with chopped parsley. As basic as it sounds, its perfect for the delicate flavours of most types of fish. This recipe uses spring onion (green onion) instead of parsley, and the dill herb in the potatoes.
