(1) Chicken Parmesan Next Level. Crispy herb Parmesan Coating with oozing melted cheese on top! One of the best chicken Parmesan recipes you will taste. The chicken is crispy on the outside with a herb Parmesan crust and it’s juicy in the middle. It has a buttery flavour and topped with freshly creamy mozzarella cheese, it’s hard to beat. (2) Chicken Chow Mein. Chinese stir fried noodles. Delicious Chinese stir fried noodle recipe that’s quick to make. Chow Mein basically means stir fried noodles.  This version fries the noodle a little, bringing out the nutty flavour while adding a little crispiness.  Having a good wok with a powerful jet does help, but you can certainly do it in a frying pan at home.  The wok gives you that wok hei, some also call it breath of the dragon or wok breath. That’s what gives your food that smoky or charred aroma flavour you get in real Asian cooking. You don’t get the same result in a pan, but the pan is much healthier, so it’s a good trade off. I have my wok set up outside then bring the food inside, it drives the neighbours crazy with that beautiful outdoor cooking smell.

(3) Garlic Grilled chicken. Greek Style with Dill Yogurt Dip. Simple to make, garlic grilled chicken recipe. This one is Greek style with lemon, herbs and garlic served with a yogurt dip. If you have time, marinade it overnight, otherwise 2 hours is fine. A perfect recipe for entertaining whether inside or outside for a tasty BBQ. For the dip, you can leave out the cayenne pepper if you don’t like spicy but it’s awesome spicy! Use a good quality full fat Greek natural yogurt and fresh dill for that beautiful flavour. (4) Spanish Style Chicken. Tender Juicy Smoky Thighs with potato and chorizo. For the lovers of those awesome Mediterranean flavours, this chicken dish will leave you wanting more once it explodes your taste, so maybe triple this recipe. I used chicken thighs for this Spanish style chicken, as they are so much more flavourful and they stay quite juicy when cooked longer. The potatoes are cut medium thin using a knife, and alternating each potato slice with a slice of chorizo, roasted in the oven with a little thyme and olive oil. They absorb the smoky flavour and soak up the fats from the chorizo and develop crispy edges making those alone enough to die for. There’s a little more involved in this recipe but believe me it’s well worth it. Enjoy this Spanish Style Chicken.

(5) Swedish Chicken Meat Balls. In a mustard cream sauce. Most Swedish meat balls are made with beef or pork, as chicken seems to be a more popular protein, I thought I’d make a chicken version. If you ever enjoyed the IKEA meatballs when shopping for furniture, you will never buy them again after trying this recipe. Best part, you only need one pan, so less dishes to clean. These balls are enhanced with “all spice” and coated in a mustard and Worcestershire sauce which marries well together. Use a good chicken mince, I always make it my self using chicken thighs. This ensures a better chicken flavour and less dryness. These are also known as Köttbullar med gräddsås.

(6) Chicken Provencal. Simple Tasty version. When I see the word Provence associated with food, my taste buds always get excited.  Perhaps I’m biased as I was born there, but the food from Provence has always been my go to preference.  Influenced by the Mediterranean, Provencal cuisine is often closer to Italian than the French Parisienne style.   Maybe that’s why I mainly cook Italian meals.  When I think of Provence, garlic, olives, herbs and tomato comes to mind.  Everyone’s heard of “Herbes de Provence” which is made up of rosemary, thyme, oregano and sometimes a little basil, fennel or sage.
This chicken Provençal recipe is a lot simpler, faster and uses basic ingredients that are easy to get.  The result in the flavour is still amazing.  The butter at the end just brings it to a whole new creamier level. You will need a good homemade chicken stock for that amazingness, but if you don’t, use what you have, it will still be delicious.
