(1) One Pan Chicken Fricassée. Browned Chicken Pieces in Creamy Mushroom Sauce. A one pan French chicken stew made with very basic ingredients.  The term “Fricassée” means to fry and to break in pieces.  The chicken is first browned in butter then braised in wine, chicken stock and slow cooked.  It’s simple to make, and anything that only uses one pan is always a bonus.  It’s easy to reheat, simply add a little water and use a saucepan with lid over very low heat.   Chicken Fricassée is best served with rice, as it has a lot of sauce for the rice to absorb. Chicken Fricassée is a delicious meal that doesn’t require a lot of complicated ingredients and simple to make.

(2) Rich lamb stew. Italian inspired with honey and Caramelised onion. The best stew you will ever taste. This slow braising method fuses the ingredients together leaving you with an incredible tender, moist and rich flavoured meat. But enough about health, this recipe is about taste. If you like those rich casserole stews, then look further, this is a complete meal cooked in one pot. The slow cooking process tenderises the meat and develops the flavour. A complete meal because it has carrots, peas, potatoes all built in. Sprinkle some freshly chopped parsley or you can even use the celery leaves to add colour and freshness before serving.

(3) Tuscan chicken. Cooked with a creamy garlic sauce with sundried tomatoes. I’m yet to find a chicken lover who didn’t go crazy for this recipe.  It’s relatively simple to make using regular ingredients, and it’s also a complete meal.  Made with spinach, sundried tomatoes, cannellini beans in a delicious creamy sauce, in 30 minutes, wow!   It’s not authentic to Tuscany, this is my version, but it does contain many of the delightful Tuscan ingredients we all love. This recipe uses chicken breasts, you can however use chicken thighs if that’s your preference.  If using breasts, you want them to be juicy and not dry. Enjoy my version of Tuscan chicken

(4) Roasted Vegetables. Simple Recipe, Bake and forget for perfect veggies every time! By cutting the veggies to the right size, you can bake and forget for 30 minutes. No adding halfway through and no flipping. The beauty of roasting lies in its hands-off nature. Once your veggies are in the oven, you’re free to indulge in other tasks or simply savour a moment of relaxation.“Vegetables require ample space! The greater the space they have on your baking sheet, without overcrowding, the superior their roasting outcome. Preheat your oven to a scorching 400°F – 200°C to ensure that the vegetables become tender on the inside and acquire that delightful caramelised exterior. Then lower to 350°F – 180°C once you put in your veggies. Apply just enough olive oil to thinly coat the vegetables evenly. Be patient and allow them to bake sufficiently to achieve those golden brown edges; this is where the true flavour magic happens!

(5) Margherita style pan pizza. completely made from scratch using one pan. Perfect Pizza at home! This Margherita style pan pizza is made from scratch, including the sauce all using only one pan. A pizza needs a lot of heat and a hot base so the dough can brown or toast underneath. Not everyone has a pizza oven at home and not everyone has an oven stone. However most people own a frying pan. For this pizza recipe you’ll need an ovenproof pan with a thick bottom, ideally a cast iron pan. The oven has to go to maxim heat, so whack it on full to preheat. Heat up your cast iron pan in the hot oven for 10 minutes, then carefully add your pizza dough to the hot pan. Yes it will start cooking and bubbling as you assemble the pizza, and that’s what you want. Once the ingredients are assembled, finish cooking it in the oven for 10 minutes and you will have a perfect pan pizza. Some notes, I also tried heating the pan on the stove, but that gave me mixed results. The oven works best. Enjoy my Margherita style pan pizza at home!

(6) Spicy Chicken Lazone with a delicious cream sauce. A very tasty and simple recipe. The chicken pieces are coated in herbs and spices and finished in a delicious cream sauce. I add white wine for that extra hit, highly recommended, but you don’t have to, it will still taste incredible without it. You could also make this with chicken thighs.
