Turkey and Brown Rice Albodigas (Mexican Meatball Soup)

For soup combine:
4 cups low-sodium chicken broth
4 cups water
¼ tsp cumin
¼ tsp oregano
¼ tsp pepper
½ cup chopped carrots
½ cup chopped zucchini
½ cup corn
½ cup green beans
¼ cup chopped onion
¼ cup chopped green onion
1 clove garlic pressed
***Jalepeno finely chopped to discretion (1/2 of one jalepeno will typically be medium spice)

For meatball combine:
1 lb. ground turkey
1 egg
1 cup brown rice (jasmine works)
1 tsp oregano
1 tso cumin
½ tsp pepper
¼ tsp salt

Cooks for 1-1.5 hrs
Towards completion add ½ cup cilantro and 1 squeezed lime
