Today I’m sharing with you one of my favorite recipes again for a vegan Bolognese packed with shiitake mushrooms, porcini mushrooms, carrot, celery, onion and lentils topped with vegan parmesan cheese.

Whether you are vegan or you’re trying to incorporate some meatless meals in your recipe rotation - this beginner vegan recipe (with its rich, robust, creamy flavors) is the perfect place to start!

We’ll utilize an easy shiitake mushroom recipe as well as a traditional mirepoix for this mushroom bolognese. It might be my favorite vegan Italian dish! It’s a great low sodium vegan recipe, and just an all-around terrific vegan recipe.
