Lightened Up Macaroni and Cheese Recipe - Perfect for your next Summer BBQ!

Today I am back in the kitchen and sharing one of my very favorite recipes from my book. I worked really hard on this one because I know how mac & cheese is a staple dish in many of our lives. I hear from my patients all the time "How do I make comfort food, but still make it healthy?". If you were born and raised on boxed mac and cheese, or your mom made that creamy homemade version - I know how hard it can be to give up your favorite dishes when making healthy changes. So, I created this and now it is a family favorite and I want to share it with all of you. I lightened it up with less sodium, less fat, added some plant based protein and I am doing it without compromising any flavor! Best of all - it's delicious and only requires one pot!
