In this video, Dr. Berg talks about whole wheat grains versus refined wheat grains. As soon as you grind the grains, it becomes exposed to oxygen and you lose a good amount of nutrition within days.
So when you buy whole grain bread or refined grain products, you have no idea when that grain was ground into flour. Yes, whole grains have all the parts of the grain, but it's still exposed to oxygen and thus a denatured product. Then you have the issue of gluten, which is also very high on the glycemic index scale. Whole grains are not much healthier than refined grains in my opinion.
