Please join me in welcoming Ivor Cummins! Ivor Cummins is an engineer and author who has done extensive research on diet and nutrition. In this interview, Cummins explains the problems associated with consuming processed foods, refined carbohydrates, sugar, vegetable oils, and industrial seed oils. These foods drive obesity, liver problems, insulin resistance, and other chronic diseases.

Vegetable oils and other industrial seed oils are prone to oxidation in the body, which can lead to several health problems. In experiments with rats, it was noted that vegetable oil played a key role in the development of a fatty liver.

Mr. Cummins also discusses how dietary cholesterol from sources like eggs and animal fat, doesn’t actually play a role in cardiovascular disease. Dietary cholesterol doesn’t change your blood cholesterol.

Mr. Cummins points out several data flaws with mainstream dietary guidelines. He also debunks many critics of keto. For example, there was a study of epileptic children who were following a ketogenic diet and ended up with some adverse health outcomes. The keto diet that these children were following included several unhealthy fats like polyunsaturated seed oils. They were also on several medications and had comorbidities. This makes it impossible to determine if the keto diet was responsible for the adverse outcomes.

Mr. Cummins points out that the “established orthodox world” doesn’t want to look at insulin as the culprit behind chronic disease, because that would mean you have to look at carbohydrates.
