Today we’re going to talk about raw vegetables vs. cooked vegetables. The purpose of eating vegetables is to get the vitamins and minerals you need from a good source. 

Raw vegetables:
Raw vegetables have enzymes that are very beneficial for your health. These enzymes help you break down food, and they give you fantastic health properties. But, many people are missing the normal enzymes that the pancreas is supposed to release to be able to digest some of the fibers in the vegetables. If your stomach has low acid, it can’t create the triggering effect for the release of enzymes from your pancreas. You could also have low good bacteria in your gut, causing a lack of enzymes.

Cooked vegetables:
Steamed or cooked vegetables are a lot easier on the digestive system. You also still get the same minerals that you need. But, you might not get all of the vitamins that you would from raw vegetables. 

Fermented vegetables are also very easy to digest, and they provide a lot of great nutrients.
