Let's talk about the benefits of carrots for a fatty liver. Some people might say that carrots are not good to have on the keto diet. 

Carrot juice is definitely not good to have on the ketogenic diet. But, even though carrots are high on the glycemic index, they have a low glycemic load. 

This means that carrots have a lot of fiber that can help buffer the glycemic index or spike in sugar. So, eating carrots won't spike your blood sugars too much. I wouldn't worry about consuming carrots on keto as long as you have a moderate amount. 

There is an active form of vitamin A (retinol), and an inactive form of vitamin A that has to turn into the active form of vitamin A. Carrots don't have much of the active form of vitamin A, especially compared to something like beef liver. It also depends on many other factors whether or not you'll be able to convert the vitamin A in carrots to the active form. 

But, the carotenoids in carrots have other very interesting properties that go beyond just supporting your vision. Carotenoids in carrots can greatly inhibit the formation of a fatty liver. Carotenoids can potentially help inhibit fat from being deposited in the liver and reduce the fat on the liver. We're talking about non-alcoholic fatty liver disease that is caused by consuming too many carbohydrates. 

Other potential benefits of carrots for the liver: 
• Reduced liver inflammation 
• Reduced formation of liver fibrosis that could lead to cirrhosis 
• They may help inhibit insulin resistance 
• Increased bile production and bile flow 
• They have anti-cancer properties 
• They can support the eyes (protecting against glaucoma and cataracts)
