You’re unlikely to gain weight on vegetables, but you will if you eat too much fruit.

Is it possible to gain weight on fruits and vegetables? It depends on the amount you’re consuming, and the frequency that you consume them.
It’s unlikely you’ll gain weight on vegetables. You might think “potato”; well, I’m not talking about potatoes. Of course, you’ll gain weight on potatoes, especially if you cook them and release their sugar, which will cause a problem with your blood sugars.
But if you consider, for example, leafy greens, 7 cups of a salad with other vegetables, would only give you 10.8 grams of carbs. That’s very low! 7 grams of that is fiber, so we’re really talking 3.8 grams net carbs. The sugar content is also very low.
You just can’t gain weight on this because the fiber doesn’t affect your insulin. You can’t eat enough fiber, because of its bulk, to eat too many carbs. You may get bloating or fluid retention that could result in weight gain, but it’s not fat. If you’re not used to consuming vegetables, and you’re suddenly gaining weight, it’s a digestive issue. Reduce the number of vegetables. You may have an overgrowth of bacteria in your small intestine, called SIBO. You can watch my videos on SIBO.
What about fruits, will they cause you to gain weight? Absolutely, but it depends on the amount and frequency that you eat them.
If you’re snacking on fruit, like I was several years ago, you can gain weight. I did. I cut out fruit and went from 211 pounds to 180 pounds.
In the past, there was wild watermelon, with completely different carbohydrate and sugar levels. So too for wild bananas, wild carrots, wild corn, and wild peaches. As well, there were wild apples, called crabapples, which were very tart without much fructose. You could literally chip a tooth biting into one because it was so dense with fiber.
Over the years, growers have changed our fruit to make them sweeter, with more sugar, resulting in more fructose. One apple contains 19 grams of sugar. That’s a lot!
Fructose is metabolized by your liver, which can lead to insulin resistance and belly fat. Fruits do contain vitamins, minerals, and phytonutrients which will protect you against sugar, but you will gain weight if you consume too much fruit.
