In this short video, I want to cover some of the benefits of alfalfa sprouts. In general, sprouts typically have more nutrients than mature vegetables.

Alfalfa sprouts are loaded with nutrients, including:
• Vitamin K
• Vitamin C
• Vitamin B1
• Vitamin B2
• Folate
• Magnesium
• Iron
• Copper

They are also packed with phytonutrients, which are plant-based compounds that have amazing health effects.

Phytonutrients in alfalfa sprouts:
• Saponins (Binds with LDL (small-dense particle) cholesterol and pulls them out of the body)
• Coumarins (Decreases inflammation and oxidative stress)
• Flavonoids (Decreases inflammation and oxidative stress)
• Phytosterols
• Phytoestrogens (Balances estrogen and can increase a good protective type of estrogen)

There is also a rare amino acid in alfalfa sprouts that may help increase lactation.
